​Monk fruit extract is a pale yellow powder to tan extract. The taste is extremely sweet, its sweetness is 240 times the sweetness of super sucrose, and the sweetness is close to that of granulated sugar, with a slightly similar aftertaste similar to that of licorice. The melting point of high-purity monk fruit glycosides is 197~201°C. Easily soluble in water and ethanol.
